Ingredients
- 4 Large or 6 Smaller Bell Peppers
- 1/2 cup of Long Grain Rice, rinsed and cooked half way through(I measured the half cup dry then cooked it and cooled it)
- 1 lb of Ground Beef
- 2 cloves of garlic, minced
- 1/4 cup of Parsley, finely chopped
- 1/2 cup of Parm
- 1/2 cup of Diced Provolone or Mozzarella
- 24oz (28 will work just fine) of Passata
- Basil
- Salt
- Olive Oil
Preparation

1) Start by prepping and cleaning the peppers, see video to see how I do this and set them aside.
2) In a bowl, mix together the beef, part cooked rice, parsley, parm, garlic, provolone, salt and pepper, mix really well, stuff in the peppers, place the top on and secure with a few toothpicks.
3) Sear the peppers carefully (use a pot just big enough to hold them all together kind of tight) a couple at a time, then stand up, add the onion around the peppers, then add the passata, some basil and salt, cover and simmer gently for about an hour and 15 minutes.
4) Serve with bread or toss some bucatini in that delicious sauce!
